looking at some rims that are 17x7.5 with offset of 35 for the fronts, rear are 18x8 with offset of 40 for the rears. would this work ? If they would work, what size tires should i go with. Thanks a bunch for your inputs.

No, they will stick out about 3/4" pass the fender line!

I had 40mm offset in the front on 17x7's and it barely fit, I don't know if 35mm would. If it did fit, it'd stick out, my opinion, don't do it.
