I have a black s2k 2007 That I am purchasing rims and tires for.
Stock OEM specs are as follows:
17x7.0, +55/215 (front)
17x8.5, +65/245 (rear)
Now I am purchasing TE37 Time attacks and tires with specs of:
18x7.5, +48/225 (front)
18x8.5, +50/255 (rear)
My question is, is it going to run fine on my s2000 or do I have to alter something? What about the stagger? How much can I lower my car afterwards?

I don't think you have enough offset for the rear.
I just purchased a set of SSR wheels with 63mm offset and the rear just clears with the 255 tire. I had to increase my rear camber somewhat.
Remember, the 18"tires are a little larger in diameter.

The 245 tires should be ok with extra camber.
I think your best choice would be to get wheels with more offset.
This way you can run a 255 in the rear and keep the front to rear ratio the S2000 was designed for since the don't make a 215 size tire in 18 inch with the proper diameter.

I have CE's
Specs:
18X7.5/225/40AzenisRt's(front)
18X8.5/255/40AzenisRt's(Rear)
Drop 1'' Tein springs and they rub like crazy in the back, your best bet is to go 245/35 in the back, that should be perfect.
