Will these wheels fit, and what size tires?
17 x 7.0 +38 (Front)
17 x 7.5 +45 (Rear)
Could I use a 215/45/17 and a 245/40/17 and not have any rubbing issues with a slight drop 1-1.5"?

pretty bad offsets for the S.
You only savior is the rim widths.... I'm thinking even narrower tires.
Get your offsets as close to:
+55 front
+65 rear
What you can't make up in offset you can compensate with tire width, rim width, camber and rolling fenders.

Your going to be limited to tire widths and my have to make some other adjustment on the rear.
You essentially just widened the rim width and increased the offset.
Stretch a tire across the rim and you shouldn't rub.

Stock on an 04 is 8" in the rear so 8.5 will actually work well and decrease the sidewall angle which is what you want.
215/45/17 front
245/40/17 rear
might require a roll or camber with your drop but that's easy enough.
