Hi I'm looking at a set of wheels 17/7 40 offset 5/114.3 think they will fit, whats the optimal size of wheel for the s plus tires?

Wheels that narrow, with no stagger, are not recommended. 7" is just too narrow for the rear. To maintain proper tire stagger would be very tough. You'd have to run a 225 in the rear and a 205 in the front, and you'd still have a tough time maintaining the OEM stagger front to rear. (See the sticky thread at the top of the forum page.)

To directly answer your question directly, the optimal tire size for the S is probably one of the OEM setups. If you want to run wider wheels and tires than stock, you need wheels with some very high offsets, on the order of 55 to 65 like the OEM wheels.
