Not much help but in case noone replies im running rear 9.5+60's,front 8.5 w 3mm spacer i think +57.. fits good handles great. So 9 with high offset should fit well. Im using 225 front 265 rear pretty sure i have space for 275. No front fender work, minor fender roll on inside lip (rear) im 2 finger gap low all the way around.

I'm running a modified rear wheel of 11.5" +63 on stock rolled/cut fenders. So yes your hypothetical 11" +60 is right on the money.

The stock rear fender clearance (assuming its rolled or cut) is just shy of 12.5" total clearance. The wheel travels inward taking up inner clearance as the suspension compresses, so this needs to be considered when sizing the wheel. Alignment and susp drop also play in the wheel geometry and therefor clearance. In my experience your going to be limited to a 295/XX width tire, unless of course you run functional over fenders.
