What white wheel setups in stock size available?
I just purchased my second S2000, a 2004 Suzuka, after having been away from the S2000 world for over six years. I have in mind a mild build including white wheels. I was originally interested in TE37s in stock staggered 17” size, but they are long discontinued in those sizes.
My current plan, after extensive searching, is to maybe try the Mita Motorsports 7s or 7s-6 in Champ White. I’m familiar with Mita as they are a much bigger presence in the NSX community (I’m a NSX owner too), and I’ve ordered from them many times. Their wheels in S2000 spec are around the same weight as stock, which I’m OK with.
Before I commit to spending $2700 shipped, I am wondering what other decent white wheel 5 to 7 spoke setups are currently out there in stock size and actually orderable? And pictures, preferably on Suzuka or Laguna. I am not planning on modding the suspension or brakes, and rolling fenders is an absolute “no”. Happy with near stock 17” stagger. Not interested in a square setup.

As for wheels - honestly I went on a wheel search last summer after rejoining the S2k ownership club myself after also a 6 year absence.
Likely your best bet would be to check most of the major wheel vendors sites for the sizes you're after. In my case I was trying to find something with 5-6 ish spokes with near OEM offsets that would clear Spoon calipers on the front but even that was a nightmare.
I ended up settling on silver Enkei PF01's with +50 front and +60 rear offsets but even those are just a little lower than I'd prefer to maintain OEM geometry. The big problem is not so much wheel selection in colors - I'm sure you can find plenty of white wheels - but rather than the S2000 has extremely high offsets and most companies just don't make wheels that are correct for the S2000.
You'll see people selling wheel sets with +35 to +45 as "S2000 spec" but they're not. They stick out of the wheel wells which looks doofy to me.
Anyway good luck and if I see anything that meets what you're looking for I'll post back here or in the FB group.

35 or 45 offset by itself doesn't mean anything. It has to have width associated with it for it to be a meaningful way of measure.
Offset just measures how far away the wheel's hub face is from its center.

Honda designed the S2000 with very high offset wheels, so if one is wanting to maintain OEM-ish geometry a +35 offset wheel will never achieve that on an otherwise unmolested car.

4. What fits?
Many people have tried many different wheels and tires on the S2000. Along the way, a lot of people have had problems with rubbing. Some had a little rubbing, and some had none. With all of this experimentation, a few things were figured out. The information below is not the drop dead final word of what will and will not fit. Certain things can be done to make something fit that otherwise wouldn't, such as increasing negative camber, running narrow tires, and rolling fenders, but that adds a lot of variability to this equation and thus is difficult to predict. We'll assume the owner has had a proper alignment, uses tires recommended for the chosen wheel width, and hasn't modified their fenders.
Based on successes and failures from many S2000 owners, we can use an offset calculator to figure out what other offsets and tires will work. These are minimum recommended offsets. You can use a higher offset if you want, and you will get additional fender clearance.
For the front:
205 tires: +43 offset minimum (6.5” to 7.5” wide wheel)
215 tires: +48 offset minimum (7.0” to 8.0” wide wheel)
225 tires: +53 offset minimum (7.0” to 8.0” wide wheel)
235 tires: +58 offset minimum (7.5” to 8.5” wide wheel)
245 tires: +63 offset minimum (7.5” to 8.5” wide wheel)
For the rear:
235 tires: +40 offset minimum (7.5” to 8.5” wide wheel)
245 tires: +45 offset minimum (7.5” to 9.0” wide wheel)
255 tires: +50 offset minimum (8.0” to 9.5” wide wheel)
265 tires: +55 offset minimum (8.5” to 9.5” wide wheel)
275 tires: +60 offset minimum (9.0” to 10.0” wide wheel)
285 tires: +65 offset minimum (9.0” to 10.0” wide wheel)
The offsets above will all set the outside edge of the tire to the same place relative to the outer fender, rounding to the nearest millimeter.
Of course, the wheel width must be chosen to fit the tire you plan to use. You can’t stuff a 275 on a 7” wide wheel, and you wouldn’t want to use a 9” wide wheel with a 205 tire. Read the specs on the tires you want to use, and figure out what wheel width you should use.

For reference, the OEM MY00-03 (AP1) wheel sizes and offsets are as follows:

You can imagine the level of personal self-loathing that has come from drilling 2 holes in the trunk lid to install the Mugen spoiler, and cutting a large hole in the dashboard to properly fit the JDM navigation mounting hardware.

A 6" wide wheel with a 35 offset would fit fine.
A 9" wide wheel with a 35 offset would not fit.
You have to pair width and offset in order to complete the picture.
Offset will affect tire wear and dynamic alignment through scrub radius.
Maybe a painted set of stock wheels would work for OP?
I'm not sure if the goal is to improve the car in some type of way or to just style it differently while COMPLETELY maintaining the stock sizing
