I am not sure what tire size would be best for the rears.... they are 18 x 10" with a +72mm offset.

The fronts would be 18 x 8 with +55mm offset so 225/40-18 sound good?

Just out of curiosity what tire would be good for a 19x10" rear wheel?

I would say 265/35R18 for the rear. This will keep you in the same height front and rear. For the 19" you would be 265/30R19.
