what tire profile should i get for 18"? 35/40?

Im staring at my new work meisters sitting on my bookshelf right now...I am ordering some tires through my friend but cant decide on what size tires i should run...
any advice?
18x8 +50 f
18x9 +55 r
i am considering:
225/40 18 f
245/40 18, 255/40 18, or 265/40 18...for the rear...
should i be using a 35 profile for the rear or will it be alright to run a 40?
My main concern is bending the rims in the la pot holes...
why do a lot of people run 40 in the front but 35 in the rear? why not 35 or 40 all the way around?
I will be ordering yoko avs sports...only due to the a hooked up price...
in addition, should i get the avs sports or es100?
these rims will be used for daily driving with my stocks for the track, but I often do canyon runs so grip is of concern. I do not do canyons at 10/10 so I do not need a048, but I do need grip.
