volk CE28 18's need tire but what size?

Looks like the right size to me 225/40/18 and 255/35/18. 215 and 245 would be a safer choice to avoid any rubbing all together. With the 225/255, if you want to lower your car you may need to add some negative camber.
You don't want 225/35/18x7.5 front and 255/40/18x8.5 rear! This set up will have the rear tire much larger than the front tire. This will screw up your abs.

Here's a picture of my buddies Ride. He is running 18 x 7.5 + 50 and 18 x 8.5 +47 in the rear, yes they are the only painted white LE/CE28 set I've seen.
He is running 225/40/18 and 255/35/18 Dunlop SP9000's tires, and is lowered just over 1 inch and he doesn't rub with Blistein PSS9 coilovers. No fender folling either.
In that picture he is not lowered, but you get the idea, I believe he's got a 1.5 finger gap at most too.
It's all about a combination of suspension choice/wheels sizing & offsets/tires sizing and camber alignment like xviper said.
