Toyo Ra1 205/255
My main question is on a 8.5 rim +54, will the 255/40/17 RA1 be too much tire for the rim, will I be loosing contact patch or would it be better off to go with a 235/40/17 which has a smaller sidewall.
I would imagine that with the 255, the tire would break in a smoother transision having more flex, but offering more overall grip. And they 235 would offer a more stable feel but break sharply instead of smoothly.
Next question would be will a 235/45/17 fit on a 7.5 +48 or better off to stick with the 205/50/17.

Autocrossers throw 275/40/17's on 8.5's and 245/45/17's on 7's for stock class S2000's. So you're well in the range of what fits. In terms of what "feels stable", I guess that's subjective...
