Jim,

What tire size would you recommend for 17x8.5 +55 front and 17x9.5 +68 rear?

not Jim, but you should run 235/45/17 Front and 255/40/17 rear

Would I have potential rubbing issues with this set-up (fronts) ?
I'm dropped 1" (Eibach).

That just seem a little bit high for this car. The 17x8.5 +55. I may try to run a 225 tires to avoid potential rubbing. But then again, a 225 tires seems too small for a 8.5 wide rim.

Yes, a 225 X 17" tire will rub on a stock ride height during high suspension loading. A 225 and certainly a 235 will for sure on a lowered car.
