Default Tire Help!

I am currently running some volks 18 X 7.5 (+48) in the front & 18 x 8 (+48) Rear wth 225/40/18 & 255/35/18 tires (Yea went alittle overboard) and I'm rubbing my fenders on stock suspension.
Anyone know what the ideal tire size should be for this setup?
Should I run 215s front & 235 or 245 rear? Any comments would be appreciated!

The best would be the 245/35R18 on the rear and either a 225/40R18 or 215/40R18 in the front. If I can help with the tires let me know.

I need to order some tires asap before I rip off my quarter panels
Would 215/40/18 on 18X7.5 wheels be stretching too much?
