Ok, first of all I'm not going to have these rims on my car forever.
I failed out of province inspection, because my rear tires, and front inner side of tire weren't good enough for fxxxing Canadian tires. I'm sure they are still good for me, I didn't have any vibration when I was even doing 240.
I'm planning to borrow a set of rims from my friends.
Assuming i will run all same tires on front and rear.
I don't care about the handling, just make sure it doesn't rub.
1.16" 5x114.3 bolt pattern.
225/ 55 / R16
40mm
2. 18x7.5 5x114.3
45 mm

any of above will fit s2k without rubbing anything?

If you run these wheels on the S2K you will have a vibration because the center bore is different front to rear. You don't mention what car they would be coming off. The offsets are pretty low on both wheels as well.
Also the 225/55R16 tires are too tall for your car. You would throw off the speedometer, odometer and gear ratio. They would also most likely rub on a bump in the road.
