I am looking at buying a set of 18" wheels with tires. I would like to know if I can run a 18x8 wheel with a 215/40 18 on the front and a 18x8.5 with a 235/40 18 on the rear with no handling issues. I could also purchase a 245/40 18 but would like to save the extra money if a 235 would work.

Given that the offset are correct. Those tire widths are too narrow for the width of the wheel. They will probably work, but your outer wheel edge will stick out further than the tire sidewall. More prone to hit/bend by hitting potholes/curbs. Especially the front 215/40 size, the sidewall is smaller. I don't think that tire size is recommended on 8" width.
A better setup would be 225/40 front and 245/35 or 255/35 rear.

I'm running:
225/40/18's front on 7 inch rims (no problems)
255/35/18's rear on 9 inch rims (no problems)

So whats the deal with 18's any rubbing? What about the speedometer? Does it need to be recalibrated?

I just drove a Boxster S with 18's and it made me want to supersize!

The size tires you mention will not work. You end up with a difference of 3/4" in height front to rear. This will throw off you anti lock brakes, speedometer and odometer.
The 225/40R18 and 255/35R18 are better sizes for the car.
