More confused the more I read. Can I get your opinion on this wheel setup?

18x8.5 +50
I have an '07 that's stock right now but I have a set of Ohlins R&T waiting to be installed (my plan was to go down about an inch.) I'd have to buy tires for the wheels since my current wheels are OEM. Can I run these without rubbing and without having to modify anything else? I'm not rolling fenders and I'm not interested in compromising the driveability of the car for the sake of nice wheels. Buy em or pass?

I think that should be fine with 215/40-188 and 245/35-18 tires...

So since you are lowering the car I would recommend going with higher offsets. You may be ok without a roll on those but the rear will likely need more camber and the fronts could still catch since the car is being lowered. I would look for closer to OEM offsets.
Also worth noting that 18's in those widths are pretty pointless. All you are doing is getting a wheel that weighs more and tires that cost more. Unless the wheel ou want is only available in 18 going with 18's really only makes sense if you want to run a tire wider than 255 as the options for that in 17's are very limited.

I ran 48 offsets front & rear and I rubbed front and back. I ended up selling the wheels and going with more friendly offsets. I was lowered on Eibach springs at the time.
