I know it is not optimal, just wondering if it is doable.

I've never done it personally... but I'd say you could do it.

I've put a 245/45 17 on a 7" rim and seen the 255/40 17 on a 7" rim.

I put 275/45 hooisers on the rear stock 7.5" rims.

You shouldn't have a problem

The problem is are you maximizing the tire. If you have to pull the tire in to seat on the wheel you are also pulling the outside of the tire off the ground to do it. On top of the fact that the sidewall is pulled in. There is always an optimal wheel size for a given tire. Can you do it? Probably. Would I recommend it? No
I hope this helps.

Well do you think a 225/50/16 would give more contact patch than a 245/45/16 on a 7" wide wheel? I figured they would be about the same but was favoring the 245 because of the gearing advantage since it is .3" shorter.

It would depend on the individual tire. The tire mfg. recommend a minimum rim width for a reason. To put on a wider tire and the outside shoulder is not on the ground doesn't make any sense. As far as the gearing goes, yes it is a little shorter but it is also a liitle heavier.
I would not recommend it.

The recommended measured rim width of the former tire is usually 7-inches while the latter is 8-inches so by placing the 245 on a 7-inch wheel, you're reducing the contact patch by 10mm, so it would still have a wider patch that the 225.
