Can you go from 215/45's to 225/45's in the front and 245/40s
to 255/40s in the rear on an AP2 V1 with no issues?

That's what I run. Don't get too hung up on the sizes, check their site for the actual aspect and tread dimensions. All 215's, 225's, 255's, etc are not created equal.
