Yes it been done and and yes In fact it is very common. Lots of people run a square 275/40/17 extreme performance tire with 4 rear oem 17x8.5 rims because certain autocross/ track clases require you to run a stock wheel or a stock sized wheel.
I can tell you that if 2 of the same exact type of tire that a 275/40/17 tires will have a significant amount of more grip compared to a 255/40/17.
Yes it will be pinched as hell but yes it will work and yes it has been done and yes there will be more straight line and Corning grip.
Also a 275/40/17 tire is 25.5-25-7 inches tall. When your speedo reads 80mph your actually going about 83mph. It's lowers your fine drive like as if your running 3.9 rear diff gears.

It will look and handle like shit. But if you’re competing on a slow speed auto X, than one of those doesn’t matter at all, and the other can be made up with by good driving, whereas the added grip cant. It’s not ideal at all, but sure, you can do anything you want. I would never run this set up on a high speed road course.
