18x9.5 +50 offset all around
Ok so I have a set of 18x9.5 wheels with a 50 offset.
I picked up a set of 245/40 for the frnts and im thinking of ordering 255/35 for the rears.
Will this setup work with rolled fenders?
I am dropped on espelier springs.

No, because in your situation the width is so close. Sidewall height is a % of the width, not a fixed number. In stock application, 45% of 215 = 40% of 245. If you are only going to stagger the width 10mm or run non-staggered then the sidewall % should be the same front to rear.
245/40 is oversized diameter compared to stock. You can run a 255/40 to match in the rear (also oversized) or get sizes that are a better match to stock diameter. A 225/40 would be very close to stock diameter.

the thing is i have a 18x9.5 wheel, there is no way i am going to run a 225 on that thing...lol.
I was just curious as to the 245/40/18 front and 255/35/18 rear would fit on my 18x9.5 +50 with rolled fenders w/o issues.

I run 17x10.0 +50 with 255/40R17 Advan Neovas (which are close in size to 265's) and you need to roll the rears a bit and flare the fronts.
You should be able to fit your setup just fine in the rear, but you might rub in the front from it being so tall. I would try to sell the fronts and get 255/35R18's instead.
