I prefer to stay in around the stock sizes if possible. 205-225frt and 225-245rear.
Is it correct that I should stagger the tire size 20mm??

They might in the front, but not in the rear.
I had a 63 offset in the rear that rubbed. Of course I was pairing it with wide tires. I also had tires that were narrower than stock rub with a 54 offset.
The stock tire widths are:
front = 7.1"
rear= 8.5"
If you check around you will see that the S02s tires are wider than they are rated which should give you a clue that tire widths aren't standard between brands. Heck even within the S02s the widths aren't standard. Compare some of BMW or Porsche spec S02s to standard S02s if you really want to see some variance!
So what you need to do is find tires that keep the actual width of the front tires at 83.5% of the rear width or another way to say it is that the rears need to be 1.2 times the width of the fronts.
You absolutely, positively cannot go by rated size, only actual size. Why do you think there are so many tales of weird handling &/or rubbing with people using the same size tires?
