My setup:
BBS RG-R
18x7.5 +50 with SO-3 225/40
18x8.5 +53 with SO-3 255/35

Lowered about 1 1/2 finger gap in front and about 1 finger gap in rear (may have to raise the rear another 1/4 inch).
Right rear rubs on hard corning and big dips.
Fronts rubs on high speed big dips (I think it'll still rub even at stock height if the wheels are compressed enough, damn inner lining).

I'm not sure how anyone else with similar setups get away without rubbing.
I guess every wheel/tire/car is made differently. Some fit some don't.
Just expressing my experience.

rears are going to rub the fenders

Your gearing is going to be too tall too

what is the proper offset for 18"x10 with 275/35 for rear?

70mm should work good (or higher up to 74mm will still clear the inside too)
