Default 17x7 +48 and 17x8.5 +40

Im not to worried about the fronts because i plan on running a 215/45/17 tire so mostly asking about the back. The rears also come in 17x8 +45. I would like to run a 255 rear tire that's why i was thinking the 8.5 wide ones. I am also riding on tein S-tech springs so about a 1in drop mabe a little less.

Any help would be great Thanks!

New question: how much performance difference would there be? If any at all. I am making 600whp

To run the 255/35R18 you will need the 8.5 wheels. With the offset you list it is going to take some modification. You will need the fender lips rolled and more negative camber.
If I can help with the tires let me know.
