Yes, you will lose performance/acceleration. But not really due to the width of the tires, but more the weight of the setup and where the weight is (18's have more weight on the outside of wheel).
Look at my sig up above (3rd or 4th post) for description of what I have.

My car by the way does not rub at all even under extremely hard cornering (hard enough to make the car break loose). Im thinking this might indicate that lowering the car wouldn't give me rubbing issues, what do you think?

There are the BBS LM's which are 17x7.5 and 17x8.5. You should be able to stretch a 255 rear on a 8.5 wheel. They suggest a 9" rim but you can usually go .5" in both directions.
RT - Yes a 17x10 (+73) rear can clear the coil spring at full extension without rubbing during compression. It is tight but works. Mine is hanging from a rack right now so I can take some pics tomorrow if you like. I would have gone 18's but Oregon roads are
in places(at least where I am at) and wanted a little more cushion between the wheel and the road.
