OEM Pads == Eh. I would reccomend bringing an extra set of pads with you, even if they are well worn pads you may need them for "limp home mode" if you burn up your brakes. (Or so I have heard it's possible from reliable sources.)
OEM Lines == On an S2000 are pretty good actually. They are very short on the S2000 so there is little room for expansion. Stainless lines are nice, but not a necessity. (They are only about $100 so no big deal to add them into the mix.)
An alternative for pads would be the Carbotech pads. I run them, and they are awesome! They dust like a mo-fo, but the dust is non-corrosive so it is very wheel friendly. They are also streetable, you you can put the pads on to drive to the track, and swap back to OEM when you get home. (Saves time and less work when actually AT the track.)

I know a lot of the SRT guys run Carbotechs and have been extrememly happy. One guy I talked to at Gingerman was actually bending the backing plate on other types of pads. He worked with Carbotech to design pad with a thicker backing plate and has been very happy. It sounds like they have a good operation going. I have Hawk HP Plus pads on the Vette and Camaro, and I have been very happy with them. I have never been able to get them to fade, and my cars are heavy. Of course, they do produce huge amounts of dust, and the dust will etch aluminum wheels if left on the wheel too long.

Phil I'll get the names of the carbontech pads I use and post it here.
I have been using them with my slotted rotors and its been the best.
I would put the stainless lines on. And I wouldn't run with OEM pads, unless you don't plan on driving hard, which I find hard to believe.

I will not be running with stock pads this time out. After the Autobahn event I pulled the OEM pads out for inspection they were glazed over and a bit crumbly. So I know they will not take the heat. I am currently reading up on pads in the UTH section. Do you run with the dust shields in place?

This is what I have been using, with no problems. And I don't use dust shields.
Carbotech Panther Plus CT 537 1106 and Carbotech Panther XP CT 829 1108, different front and rear models. I also use Motul 600 fluid.
I do not get brake fade, while I hear others with the superblue sometimes do. I bleed out alot of fluid before and after an event. Either are good fluids.
I would seriously think about running these pads instead of OEM, coming for the long straight, you will thank me.

I will order a complete set very soon. I just sent an e-mail to CarboTechEng, seeing what kind of discount I am going to get for being a member of the Lotus Club in good standing.

If you can get your hands on a set of Cobalt Spec-VR/VX for the event I would do so. I know there are a few guys in the R&C forum with a set for sale.
Grattan's front straight is pretty fast (120+ in an S (Pete, shut-up about your Z's speed )) and I don't know if I would trust the OEM pads for an entire session, especially if you're running r-comps. Spend your money on pads instead of lines if you have to make a choice. You will notice the pads instantly, lines, not so much.
Grattan is a great track, I'm going to do my best to bring my S out there that day with a different set-up if it works (265's all around w/Gendron bar). Hope to see you guys there......
