I work for a name brand insurance (if your interested in which one, PM me) and we do not cover aftermarket parts. We basically insure you on an OEM basis. We do have a $1000 in aftermarket parts coverage but that will be the limit. You can expand stero equipment and tape (yes tape) coverage.

Ohhhhh I see. However, seeing as how I have identified that i heavily modify my car his first sentence stating his company doesnt cover aftermarket renders his services pretty much useless (to me) . I'm just busting balls, I do appreciate the solicitation - we all gotta make a living!

It's typically the norm for the big companies to not offer any type of coverage for aftermarket parts, or have a low limit to protect themselves. I can totally understand insurance not wanting to pay out for $10k+ for parts that weren't included in the written policy, it sucks, but as a business practice it's very smart of them.
I'm going to look into a different policy on my S, I'm quite certain I'm not covered for all the stuff on mine, nor would I expect to be, as I haven't told my provider.
GL with yours, the email they sent you should hold up, they never plan to have to pay out, but telling you you're covered is a contract, whether they care to admit or not.
