I had the same issue. Rattling and wind noise. I took it to Motorwerks and they replaced the latches with 02 latches. This was just last season. At that time, I only had approximately 13,500 mi. So, I called American Honda and complained. AHM paid for the parts but I had to pay for labor.

What plastic piece inside the latch are you all talking about? I couldn't find one? Do you mean the actual latch enclosure?

this has got to be the most annoying problem yet. I can't seem to figure out what's causing the noise. Probably a simple fix. Even when I hold the top down tight, or hold the latch tight, I still get the squeak for the latch.
I still haven't found the plastic piece in the center of the latch, maybe they changed it on 03?
The latch seems to hold tight on the stricker. The sticker screws are tight. The latch is tight. There is no air leak..........wtf

Sounds like your top needs to be adjusted then. Even though you check "tightness" with your hands, you have to remember there is a certain amount of flex in the S2000 chassis, yes in the S2000 chassis. It's the flex that may be pulling the top to and from the latches, causing one of them to squeak. If this is the case, then the opposite latch needs to be loosened.
The best way to go about this is to adjust the tension on the guide wires for the top. I can type out the explanation, but it would take me less time to just show you how.
I checked my latches as well yesterday. Of all the striker assemblies I've seen through the years, I do not recall seeing one of them with a plastic "cover" in them.
I wonder if Honda changed something in 2003 to address a certain issue.
The best way to go about this is to adjust the tension on the guide wires for the top. I can type out the explanation, but it would take me less time to just show you how.

See the dark greyish/blue part between the latch and the top? Thats plastic. It has some play in it.
Heres another view with the latch open (The red arrow is pointing at the plastic). If you look at the hinge assembly from the outside going in you see the latch, then the plastic cover, then the hardware that is mounted to the top. For some reason the plastic in between the mount and the latch can not be tightened in any way.

Thanks Road Rash for the closeups.....I held onto those plastic side plates and the noise was still there.
EDIT: I just figured it OUT!!! I placed my hand across the metal beam between the latch and the top and held it down tightly..........the noise stopped. It took alot of downward pressure to stop it from rattling while I was driving over the bumps.
The damn thing feels tight, but I guess it aint tight enough.
