Am I missing something or is he running with no air filters on the inlets?

Yeah looked that way, and didnt notice any ducting for air intake. The heat soak must be bad.

you'll have to explain what ITB means

Whatever, I can't say I've examined many race engines lately, but I seem to recall years ago there might at least be a dome of mesh over the air trumpets - do I get a prize

The comparison's irrelevant anyway as race engines aren't designed to do 100,000 miles without a rebuild and the car in that vid sure looked like it was used on the road
