I did mine with the smaller gaps and it seemed to make the valve noise worse. So I went back and did again with the standard gaps, and it didn't make any difference - was still louder than before. Oh well.
It's easy enough, if a bit fiddly. Obviously you need feeler gauges, and an appropriate torque wrench (i.e. a low range one, not a doing up suspension bolts one).

8 and 10 is perfect, but remember that the tolerance is 2-3 thou so expect someone to whizz around check them with the upper tolerance and not adjust them to minimum spec.
I have done cars that have had this done at Honda and they have been miles out.
As for torque, I wouldn't trust the 21lbs/ft at all!

I improvised the valve adjustment tool with a 10mm box spanner and a screwdriver but IMO it really wasn't necessary (especially not necessary to fork out the £30-odd for the proper tool that was the cheapest I could find) I used the S2K_Valve.pdf only as it was easily printable to take out to the car with me for the torque settings

I have an open socket set that I can get a screwdriver through that I use. It's very handy.
And from the drive to work this morning with 7/9 clearances, it really does feel like I have more pull and response from 2.5krpm to vtec point. The changeover into vtec is less of a kick now but it certainly feels like it makes the car more drivable. This may well all be placebo effect however.
Pre-change, all my clearances were within tolerance but now they're all 0.007 and 0.009.
