If they've ****ed up, they should pull their finger out to get you the car you ordered.
Or give you some compensation. I would have thought anyway.
As for some extras as a freebie.

They have said they will make the deal as sweet as they can if I take one of the options they've given me (Not sure what that means)
Additionally they have said if I choose to walk away altogether they will return my deposit in full - No more than I would expect but I think overall they have been decent about it

Sorry to hear about this mix up dude. You must be well gutted.
If it's just a case of changing the seats and the door cards, I'm sure Honda UK would be able to source another set of each and swap them over.
Have to agree on the full pimped red interior. It's just too much, unless the cars in Grand Prix white, then it looks proper bo'

I like what has been offered but as you say it is not what you ordered. If you like it enough then push for a deal on it. But if you will always hanker after your original options then walk away / re order
The decision to refuse the car was therefore simple - It was not exactly what I wanted
My whole situation is now complicated (and this was not part of the decision to refuse the car) by the fact that I have just been offered a promotion which involves relocating to Asia
Why can't life just be simple?
