In answer to a couple of your questions:
MPG - who cares, you don't buy a 2 seat sports car to worry about mpg .
GT Hard Top - Looks nice on but many people who have one use them less over time, not worth it IMHO
Different specs - The great thing about the S is that it only really has one spec; all with same engine, air con, electrics etc - Multichanger and Hardtop are about the only options. I believe all UK spec cars come with an alarm.
Best of luck buying! Take some time to get used to the way it handles in the winter months, it's nothing like as forgiving as the TT. Although the S does have traction control (in the shape of your right foot )

Performance - equal well only if your robocop was chipped & more. 157 bhp/ton against 187 bhp/ton is quite a difference.
Corners - Well S2k is rear wheel drive and doesn't have traction control, so you'll have to learn how to drive before you can corner properly.
