Off the top of my head here goes what i know:
Head lights have silver surrounds
Interior has some fake chrome on the handles and tweeter domes.
New tweeter dome in door card.
CD player with clock.
New style gear knob with leather.
Glass window in soft top with heater
Different alloy design, meant to be corrosion resistant yeah right.
Softer suspension set up to aid handling.
Leather centre console cover.
Dependant on when the 02 was registered and made all recalls should ave been done.

Could you do "Honda S2000 from 2000 to 2002" as a specialist subject on Mastermind? 
Other changes I can think of are :
Clear side indicator repeaters
Less prominent VTEC point
Err... can't think of anything else

No differences whatsoever in between these MY years 
But MY02 onwards as above +
Rear lenses have chrome ring surrounds
Headlamp wash switch moved to the dash from tunnel
More colours.
Improved lock points for roof lock mechanisms.
not sure if non GT's had the gubbins to just drop a hard top roof on, fitted as std. (so only needed to but the hard top IUSWIM)
