If he has a purchace invoice in his name then the car legally belongs to him and she has no entitlement to sell it.

and if you really want to get technical then even if you have no paperwork to show you bought the car and just registered it in the wife's name for convenience, you may convince a court that the car was yours for all intents and purposes and that you are the beneficial owner of the car (this relies on the rules of equity though, which have a number of obstacles such as "coming to the court with clean hands" i.e. no fault on your part). However, a bona fide purchaser for value will take ownership free of the equitable interest IIRC.
