Modern gearboxes have strong enough syncro's that you just don't need to worry about them (within reason). You'll also put a lot more wear into the clutch by slipping it on a hill start or a violent 0-60 style start than you ever will be working down through the gears when you're slowing down.

going up, I will VERY occasionally go 4-6
but only in 'pootling mode'

If you know you are coming to a stop, don't see the point in dropping through the gears. I normally slow down in whatever gear I am in and when the revs are around 1000-1200, I just knock the car out of gear w/o using the clutch.

I do all sorts depending on the conditons.
If I know I'm going to have to stop for whatever reason, I'll leave it in whatever gear I was in and then dip the clutch when necessary just before coming to a standstill.
If I'm having to slow down but may well not have to stop, I'll change down as appropriate. eg, cruising at 30 in 5th, red light with queue of traffic changes to green and begins to move, I'll slow, then change down to an appropriate lower gear to accelerate again.
When "pressing on", or on a track day, heel and toe downchanges are the order of the day.
Roadcraft says brake, stop braking, then select appropriate gear for whatever's coming next (this may be neutral), then accelerate away in the appropriate gear.
I coast where gentle deceleration is required.

I think this is where the confusion lies... When I refer to depressed I mean with my foot off the clutch pedal, which in fact means the clutch is engaged.
It's the clutch pedal that's depressed not the clutch...

By coasting, do you mean driving along with the clutch pedal depressed and then simply stirring the gearstick around and raising the clutch pedal?
If so, then I agree that's a total waste of time.
