I have topped up an empty COOLANT bottle again today.
The oil is perfect no sign of contamination, ive checked around the water pump, no leaks. All pipes are in good condition. The rad has no sign of damage/leak and there is no wet carpets. so its booked into Honda a week today.
I suspect a leak but it may be so minor that it is evaporating.
I will keep posted on the results after its been in to Honda

Update on my S's new habit of drinking coolant.
Took it into Honda for the afternoon, unfortunatly they can not find a thing, spoke to the mechanic and they can not find any leaks at all.
They did suggest to keep any eye on it and suggested possibility of a pourouse head or gasket problem but very unlikely.
The strange thing is that the S only drinks on a good run, must get thursty,
going to and from work it doesnt seem to use a drop.
I have considered that it could be when the heaters are on and loosing colant through the Matrix, but loosing a full bottle of coolant, you would expect wet carpets.

Nobody mentioning the obvious, you said it's just had a service.
So what did they pull apart then, and did they change the coolant?
If so my guess is they haven't refitted a hose correctly.
Maybe somewhere around the TB or heater supply circuit. They possibly yanked one of these off to bleed air if it's had the coolant changed. Anyhow it's their fault so get it back there.
What I have seen are some peculiar leaks over the years. We had a Rover in that lost fluid like this, but only over night.
It was during the cooling down that the bottom rad hose leaked a little but as it was onto the floor nobody ever noticed.
As Steve mentioned, small spraying leaks are really tricky to locate. In the worst case get some fluorecent coolant dye additive. Then run it and inspect with a UV lamp and it will show itself clearly.
Why did the mechanics not suggest this? Try someone more competant!

If you go to any competent garage or AA they have a devise which fits to the radiator instead of the cap if there is any trace of carbon monoxide in the water it changes color. you could have a microscopic leak in the head gasket that allows a small amount of water into the cylinder on every induction stroke its vaporised and leaves the engine as steam with the exhaust gas, if its excessive you will have white exhaust fumes out of the back even after the car has warmed up but it could be so little as not to be seen. it leaks on the induction but a small amount of exhaust is forced into the water on compression and detonation strokes this is what the devise picks up.

How hot is it getting? My radiator fan switch failed and as a result coolent heated and steamed off. Luckily I caught it in time and no damage but could be something similar for you?
Drive with the AC on for a few days (forces fan on all the time rather than just to switch on when thermostat gets hot) and see if you still drink a lot. If you don't then it could be your fan/switch/thermostat.
