The Stoptech is one of the larger options I think? I was looking at the Spoon and Brembo options....

wilwood 4 pot, wilwood 6 pot, spoon, brembo=stoptech.

Where do the AP Racing (AmuseBoy) and Tarox kits fit in?

I do not know if spacer is needed for tarox brakes, I do not know how they preform.

AP should be similar than Brembo and Stoptech. AP belongs to Brembo, and Brembo makes stoptech calipers I think.
