On Arran, I rarely worry about my roof up or down, locked or unlocked. Lucky I guess, but at this time of year I do like to know the car isn't being drooled over (or in!).

But it's entirely simple.
Just lift your tax disc off the screen and lock it in the centre box between the seats, then plonk it back on the screen before you set off again.
With the roof down, just leave the car as normal and push the alarm button to prime it. If any prat does reach inside whilst you are out, the alarm goes off and you can take action provided you are not too far away. If you are going out of range for a while, then it's prudent to put the roof up.
My wife and I went for a cruise around some nice Cotswolds spots today and we parked roof down 3 times without any problems whatsoever for about an hour each time. But then you do not tend to get the oik types over here fortunately, nor do we want them. The city ghettoes can have them.
On the odd occasion I have ever had any bother, the perpetrators never forget that day, I can tell you.
