How bloody hot does the intake manifold get?!

Upgrade the radiator and problem solved
Exactly - though I would have thought the fan control would pick up the increased heat input and remove it with high fan running times?
Also it is not EXTRA heat is is simply being redirected way from the manifold to be retained in the main cooling system.
Like getting the intake ported for instance
Ooooooh yes 70mm BDL throttle body sat in garage

With regard to engine cooling, how effective are the aftermarket Thermostats and fan switches which can be bought from J's / Spoon / Mugen ?

All they do is lower the point at which the radiator starts to cool the engine. At 88C the stat opens allowing coolant into the radiator and the engine then stops warming up and maintains a temperature of around 88C.
This is the case for normal driving anyway. If the temperatures go above 88C, very likely with hard driving, then the stat is fully open anyway, doesn't make much difference if it opens at 88C or 82C (as per spoon etc stat), it is still fully open and the radiator is working as hard as it can.
