Could the hunting be down to the DIP switches on the greddy emanage?

Have you got the fuel pump installed? Check the injector seals, boost leaks, check all your sensors, plugs

It looks like to me you have removed the egr valve but not blocked the vac pipe off!! Right hand side of the picture!

the fuel pump is in, smells like it is running really really rich. injector seals, plugs and sensors look good, I don't think there is any boost leaks, it builds boost well and sounds in good order. literally just on idle which is currently around 2000rpm, when it has a few revs it seems to settle down a bit.
Egr is removed but that pipe goes to nowhere, it has nothing plugged in at the other end so the whole hard pipe section bolted to the fuel rail is redundant

Well that would be my first port of call around that area. The small vac port that connects to the metal line that runs along the manifold goes through a solenoid then runs back to egr valve. You can see the manifold end is still connected trace where it goes and I'm pretty sure you'll find your problem. Run the dump valve off that port and use the oem fpr vac line then you can be sure.

I'd personally run a oil catch can on a boosted car. Oil vapour I'd going straight back in your intake and will be reducing combustion.
