Bridging the two connectors will cause both fans to come, the reason why i know is because i have a switch wired in on my car so that on the cooling down lap on a trackday i can switch the fans on.

I was under the impression that the temp sensors/rad switch failed safe. When my rad switch failed the fan kicked in permanently.

Big thanks to everyone for their input, changed the sensor/switch today and the fan is now working
