I'm not local but i found Driving For Pleasure is a good place to have a look for some nice routes. Reasonable list of places to go and the one's they list for Wales didn't disappoint when i drove them.

Northlallerton over to Stokesley is a nice run and some of the moors roads when you get up Kirby Moorside are also very nice. ... also Stokesley over to Helmsley via Chop Gate on a sunny day is a really nice road.

More about the views than the roads - just watch out for sheep / locals / tourists paying more attention to the former than driving
