I picked up my K&N FIPK from Crutchfield.com at a fair price. Did you swap your J's hood back to the Berlina?

Not yet but I'm going to. I'm concerned about whether the vent on the hood would allow water to drop directly onto the K&N filter. Perhaps I'll have to put some material over that corner of the vent, if I decide to go with that product.

Ask TxDOT (I don't think there is an organization called "DMV" in Texas), but it's really up to the buyer to have the correct NY forms for you to complete. There is a Texas form you can file after the sale to be sure the Texas title and registration is cancelled.

I bought a NY transit permit when I bought my car in NY. As I understood it, the permit allowed driving the car without a plate prior to permanent registration. I would not think it is needed for a licenced vehicle.
