There's some good trails out near Uxbridge in Durham Forest.

Another fairly good set of trails in bradford. Don't quote me on this but I believe it's off the 11th line right by the 400. I haven't been there in a while.
Pottery road, you'd thought it should be nothing since it's actually located within the city, but in fact it's a quite physically demanding trail. Narrow trails, lot's of ups and downs, contant shifting. Quite technically challanging too, more so than Stouffville I find. But the overall distance is kinda short, but if you do ride fast, you'll can get exhausted soon.
I have yet to try out Albion Hills.

I realize this post is suppose to be about "road bike"...Sorry about getting off topic.

The fastest x-c mountain bikers come from road backgrounds.

I live in Uxbridge and the riding at Durham Forest and Walker is good, I actually built most of the trails there!

Albion Hills is also great for a x-c ride, but we don't build any trails for hucking air (Chico Racing also developed the trails there).

If you guys are in for a real challenge it sounds like there are enough S2Krs who could assemble a team for the 24 Hours at Albion: Hot August Nights next weekend!

If you get a chance try riding up in the Muskokas at a place called Buckwallow (it is a lot of fun and lots of rocks and drops). Even more radical is Santa's Village, but I prefer Buckwallow.

I did a 24h race a while back at hardwood. That was brutal when I was in shape. I'd die trying that now
