Another mtb-er here as well!
There's Stouffville(stouffville road, slight East of Bayview). The trials are not too advance, but does have a few really steep and tricky ones.
I've been to quite a few different trails, pottery road, Durham forest... but recently have only been visiting Stouffville only, cause the location is relatively convenient, and still trails are still plenty of fun. There are drop zones (max 1.5 storey high I think) inside the forest, if you ever get bored with trails.
I go every Sunday morning around 11am.

Stouffville is not too bad location wise. Never been there.

Pottery road is close. What were the trails like?

There's some good trails out near Uxbridge in Durham Forest.

Another fairly good set of trails in bradford. Don't quote me on this but I believe it's off the 11th line right by the 400. I haven't been there in a while.
