Cayuga is relatively flat and only one wall along the straightaway. I have been to shannonville but not driven it. From what I saw and talking to others, it's a good one for newbies also.
That being said, please check out the organizers of the lapping day to make sure that they will be inforcing some rules and order to make for a safe day. And if you can get someone to show you the line, that's good too.

Both tracks are fairly safe, but you always need to respect the dangers.
Shannonville is probably more challenging to a newb depending on the track config as it can be considerably longer than Cayuga or Dunnville.
