For the dash and other vinyl and rubber parts of the interior, I use 3M's 303 vinyl protectant (for the top as well). For the leather, I use Meguiar's Leather Wipes.

Like Dario above, I've used Meg's Leather Wipes and they work well; and I use the 303 for the top.
Lexol and Vinylex are also nice cleaner/conditioners for both the leather and vinyl portions of the interior. You can get these from Proper Auto Care. (Catalog or web)
You can buy Meg's at any auto store...

I'm not familiar with the MY2000 interiors, but I assume in general it is the same for a few areas:
1. The perforated middle patch in the seats
2. The perforated side patch on both doors
3. The perforated arm rest
4. Steering wheel. (...but I've heard that if you put your hands at the 10 and 2 o'clock positions, the perforated parts, that is the only leather) But I think it's the whole steering wheel.
5. Stick shift knob.
6. The stick shift boot is NOT leather

You are correct...except the perforated middle patch in the door is leather.
There was a subject posted some time ago on this very question; the poster's father was a leather expert in the upholstery field, and confirmed the leather areas for us. He claimed that leather is the only material able to withstand perforation and hold up; therefore, all the "perforated" areas are leather, everything else is vinyl.
[Edit] Okay, worked on it...looks great but need some clarification to make sure I didn't mess up...
Parking brake = leather? (Doesn't look like leather or feel like it)
Non-perforated parts of seat front = non-leather? (Feels like it)
