clay barring is always a good idea. another way to remove old stuff is "cleaning waxes" which are ment to be ever-so-slightly-abrassive in which to remove some old build up on your finish.
polishing/compounding is another story as mentioned from my fellow s2ki-ers.

you guys should check out the wash and wax forum and have a look at the $1000+ swissvax wax those guys are using.
back on topic, waxing too much isn't bad for the paint, but you will come to a point were you'll get diminishing returns with each additional layer.

the $200 dollar stuff is Dodo Juice Supernatural. best wax i've ever used hands down. the $40 dollar Lusso Oro that Detailer's Domain sells (the wash n wax sponser) is AMAZING. i couldn't believe the visual difference after using sealants for so long.
but then..... i used supernatural. wow. competes with the big boys (swissvax, zymol, etc) at a fraction of the price and is the best i've personally used.
did i mention the full pot of it comes in an airtight wooden container? (airtight is better as it'll preserve the wax longer - the solvents used in it won't naturally evaporate as quickly). Dodojuice is an awesome company, and the thing i like most about them is informing the public/details about wax myths and such. check them out over on the UK site detailingworld.co.uk and read some of the posts they'v done over the last while - like the one on Dodojuice Flat Earth.

paint cleaners are a safe way to remove old wax as well. P21S, swizzvax, and lusso make them, as other companies do too.
I have a jar of Glasur, which is around $100. Excellent wax, especially for black paint!
I have used waxes that cost less that are very nice as well, one of my favorites being Wet Obsession.
