Mother's Protectant to "top it off"
So after doing some searching on this site I found that our tops are vinyl. 303 Protectant seems to be popular, but has anyone tried Mother's protectant? Would it work for our tops?

i don't see why it wouldn't work albeit it would look nice BUT i'm not sure if mothers has UV protection
you mention, 303 (and rag top) are among the highest rated dressings for the top so why not just use that? sure it's a little more expensive but a little goes a long way

Yes, you can use Mother's Protectant on your vinyl convertible top. Just be sure to clean it first. If it hasn't been really cleaned in a while, you might want to use a vinyl cleaner (303, RaggTopp, Amazing Roll-Off, Megs' M39, etc.); otherwise, your regular car shampoo should be sufficient. Use only a nylon or natural fiber brush and preferably one that is not too stiff.

The full name is Mother's Preserves Protectant. I've used it on my '05 since new and the top still looks new. It will streak onto the paint if it rains within 24 hours of application.
