Mink oil on my 05 S's seats?

Mink oil I don't even know what that is. Most people around here use a good leather cleaner/conditioner from a reputable company which is designed specifically for use in the car. The most popular brands are Townsend, Lexol, and maybe Zaino.

my fav is townsends- you need their cleaner and separate preservative.
i also use lexol and have used zaino. lexol is my 2nd fav (and it too requires a cleaner and a separate preservative).
getting ready to do the wife's new bmw convertible and will use townsends on her leather. townsends is only available from their website (as far as i know)...

mink oil is a great product, and i would not be surprised if the ones i mentioned have it in them (i understand that many leather care products do contain it)... however, i would not use it straight- for one reason, i understand that it can stain clothing if it is not fully absorbed by the leather. further, your leather needs more than just oil.
