Keeping the Inside of the S clean

1. Give it a good vac. job.
2. Get yourself a static duster brush and thoroughly dust every nook and cranny.
3. Use a damp drying chamois and wipe everything down (rinse and wring out as needed).
4. Use 303 Aerospace Protectant on everything. It's fantastic stuff, low-medium gloss, not too greasy, and great UV protection for our interiors which get a lot of sun. And as another poster mentioned, our seats are coated leather so don't hesitate to use it on the seats.

On the leather portions of the car I use the water-based Leather Master Strong Cleaner. I do not use a conditioner or protectant. Based on what I have read, coated leather needs periodic hydration (hence the choice of a water-based cleaner), but it's not clear to me that it will benefit from leather conditioners. If I were going to use a protectant, I would go with {url=http://www.autopia-carcare.com/ult-6112-110.html>Ultima Interior Guard Plus[/url], which can also be used on the vinyl.

For the vinyl and plastic, including the clear plastic covering the speedometer, I use 1Z Einzett Cockpit Premium, available from Detailers Domain. It leaves a nice matte finish. If I want to give the vinyl a deeper cleaning, I then use Meguiar's M40. It's behind a somewhat shinier surface than the Cockpit Premium, but less shiny than the 303. I also use the M40 on the rubber seals.

This is what I do. As stated above, 303's a protectant. It's really not much of a cleaner. I guess you could dust with it if you wanted to. I've never had problems with 303 being shiny but I do wipe down after it's dry per the instructions. I'm guessing if you didn't it would probably be shiny (and attract dirt and dust).

Meg's Interior Detailer to clean

A leather cleaner and conditioner on the seats (most are for leather/vinyl anyway, so I don't care which bits are really leather), and 303 Aerospace to finish everything. Diluting it is a good idea since my seat belts squeak against the sides of the seats for a month after I treat them. However, I'd not skip out on 303. It might be the single most useful product I have for my S being that she's a baby of the sun.
