I use a California mini duster and this Lexol combo pack. The seats and leather parts get the leather cleaner and conditioner, and the Vinylex goes on all other vinyl or plastic parts. I dust and vacuum every wash, and usually apply interior detailing products every other wash. The leather cleaner and conditioner works great on leather shoes too btw.
If your seats haven't been conditioned in a while, applying several coats of conditioner over a few days will help restore the color and soften them, preventing cracks and extending their life.
Here's an S2000 specific detailing handbook, an invaluable resource.

Detailing products help preserve the interior, I like to use 303 Aerospace on all the vinyl, and Pinnacle conditioner on the leather.
Outside of detailing products I highly recommend leather upgrades from jpmcoachworks.com Just adding a few of their parts to replace the oem stuff can really transform the interior and make it "pop". They use the best leather in the business. My leather upgrades are some of my favourite mods that I've made to the S2000, they are something you appreciate every time you get into the car.
On the S2000 you they can do leather upgrades for the shift boot, elbowpad, sunvisors, door card inserts, e-brake handle, console cover, and steering wheel. There are lots of options for colour and stitching.
